This salad has quickly become one of our favorites because of how effortless it is to throw together! One of the most important parts of a salad is the dressing, a good dressing can either make or break your salad. The tahini in the dressing adds a subtle creaminess and compliments the orange nicely. If you aren't familiar with tahini, it's made from toasted sesame seeds and has a more runny consistency similar to natural peanut butter. In the grocery store, you can typically find tahini in the condiment and oil aisle or near the nut butter.
A little tip that I have when making a vinaigrette is to always taste it. The best way to do that is to dip a small piece of whatever green that you are using into the vinaigrette and then taste that. This will give you a good idea of how the dressing is going to taste when on the salad without having to pour it all on the salad.
Orange and Avocado Salad
Yield: 4 Servings
Ingredients:
6-7 cups of mixed greens (used a super green mix)
3 oranges, peeled and sliced
2 avocados, sliced
½ c. crumbled feta cheese
1 c. walnuts, toasted
Dressing:
¼ c. orange juice (100% no sugar added juice if possible)
¼ c. tahini
2 tbsp. fresh chives, chopped
2 tbsp. fresh parsley, chopped
3 tbsp. apple cider vinegar
2 tsp. raw honey
¼ c. olive oil
Salt and pepper to taste
Directions:
1. Begin by making the dressing. In a small bowl combine all of the ingredients except for the olive oil and stir together with a whisk. While you are still whisking, slowly pour in the olive oil until combined and emulsified. Season with salt and pepper.
2. To assemble the salad, place the greens in a large bowl and toss with about 2/3 of the dressing. Add the orange and avocado slices, feta cheese, and toasted walnuts. Toss everything together and dress with additional vinaigrette if desired.
