Peanut Butter and Chocolate Granola

Try making your own granola with this easy 5 ingredient recipe! The best thing is that you can customize it however you want, be sure to check out the tips on how to do it.


Granola is one of those things that we always have in our house. Whether it goes on top of a yogurt parfait, in a bowl with some almond milk or just simply to snack on. The great part about granola is that its is really easy to make and you can use whatever you want to change up the flavors. In this recipe I love the addition of hemp seeds and kosher salt. The hemp seeds add a little extra protein and omega-3 fatty acids, while the salt helps balance everything out on the palate.

When making granola there are so many ways to customize it to your like just keep these few simple things in mind:


-Binder: If you want a granola with larger clusters of oats, consider adding in a nut butter. Nut butters act as a binder and could include anything from peanut, almond, cashew, etc. If you prefer a looser more flakey granola, omit the nut butters.

Other binders that you could use would be raw honey or pure maple syrup. These won't give you the same effect, but will help make things stick together.


-Sweetener: I prefer less refined sweeteners such as raw honey, pure maple syrup or sometimes agave nectar. Just remember that a little bit goes a long way. If you don't want to add a sweetener you could always use dried fruit for a subtle sweetness.

-Mix-ins: Additional things that I like to mix into my granola to add flavor and texture are; nuts or seeds, dried fruit, chocolate or spices.

Peanut Butter and Chocolate Granola

Yield: Makes about 2 cups

Ingredients

2 cups old fashioned oats

¼ c. natural creamy peanut butter (or any nut butter)

¼ c. honey or maple syrup

¼ cup 70% dark chocolate chips

3 tbsp. hemp seeds

¼ tsp. kosher salt

Instructions

1. Preheat your oven to 325 F degrees.

2. In a mixing bowl, add oats, chocolate chips, hemp seeds, and kosher salt and mix them together.

3. In a small saucepan, combine, peanut butter and honey until melted and smooth. Pour peanut butter mixture over the oat mixture and stir with a spatula to evenly combine. (The chocolate will melt a little bit, but that’s okay, that’s what we want).

4. Spread the oat mixture onto parchment paper or a silicone mat lined baking sheet. Making sure that it is spread out into an even layer.

5. Bake in the oven for about 8 minutes and then remove from the oven and stir the granola around on the pan to prevent the edges from getting over cooked.

6. Place the pan back in the oven and bake for another 8-10 minutes or until the granola is golden brown.

7. When done, remove from the oven and allow to cool. (This is where all the crunchy goodness happens.)

8. Once it's cooled, place in an airtight container to store.
