Black Bean and Farro Tacos

Tacos are one of our favorite things to eat; we could easily eat them at least twice a week!


In these tacos the base is black bean and farro. If you have never had farro, it is a very nutritious ancient grain. It's light brown in color and when cooked looks similar to barley. Farro also has a delicious nutty flavor and a chewy texture that makes it a great alternative to other smaller grains that can sometimes get mushy like quinoa or rice.


When planning out what we eat each week, I always try to include whole grains wherever I can. The reason for this is because they are very nutrient dense and a great source of plant protein. Farro specifically has high amounts of zinc and magnesium. Zinc is great for aiding in a healthy immune system and magnesium is needed for building strong bones, and aids in muscle function. Farro is also really high in protein (higher than most grain sources) and also high in fiber. I combine the farro and black beans together in this dish so that we get a complete protein and receive all of the essential amino acids.


Basically for this recipe, the beans and farro mixture is your base and then top them off with all of your favorite taco toppings! I hope you like them as much as we do, and don't worry, this won't be the last time you see tacos on here!

 

Black Bean and Farro Tacos

Yield: 4 servings

Ingredients:

1 tbsp. olive oil

1 can black beans, drained and rinsed

1 c. farro, cooked

2 tsp. cumin

1 tsp. paprika

1 tsp. chili powder

¼ tsp. cayenne pepper

3/4 c. vegetable broth

Salt and pepper to taste

8 small tortillas (flour or corn)

Toppings:

Avocado, cilantro, lime, cotija cheese, sour cream, salsa

Directions:

1. In a medium sauté pan, heat your oil over medium high heat.

2. Next add black beans and cooked farro to the pan, then add spices and stir to combined.

3. Once incorporated and fragrant, add in the vegetable broth and reduce to low heat to allow to simmer.

4. While the bean and farro mixture is simmering, prepare toppings and heat up tortillas.

5. Most of the liquid should be cooked out of the beans, but they should still have a sort of saucy consistency.

6. When everything is ready, assemble your tacos with all of your desired toppings and enjoy!
