Black Bean and Rice Baked Taquitos

I've been a little MIA lately, my internship has been keeping me very busy! When I'm short on time, these Black Bean and Rice Baked Taquitos are one of my favorite weeknight meals! ⁠

The filling is really easy to make and requires minimal ingredients. Then you simply put it in a corn tortilla, roll them up and toss them in the oven.

What are some of your easy go-to meals during the week?


 

Black Bean and Rice Baked Taquitos

Yield: 12 taquitos

Ingredients:

1 cup of rice

2 Tbsp.

1 onion, finely diced

1 can black beans, drained and rinsed

3 cloves garlic, minced

2 tsp. ground cumin

1 tsp. ground paprika

Salt and pepper to taste

12 corn tortillas

Garnish with cilantro, lime juice and/or cotija cheese

Directions:

1. Preheat oven to 425 degrees F.

2. Cook rice according to package directions and/or preferred method.

3. Heat a large sauté pan and olive oil over medium heat. Add onions to the pan and cook until translucent.

4. Add beans, garlic, spices to the pan and stir to combine. Season to taste with salt and pepper.

5. Once the rice is cooked add it to the pan with the bean mixture. Stir to combine.

6. Using a food processor, place two-thirds of the bean and rice mixture into the food processor and pulse until roughly chopped. (The purpose of this is to help make the mixture stay together when putting it into the tortillas.)

7. After the mixture is chopped, mix it back in with the remaining one-third rice and bean mixture. Stir to combine, it should be thick and slightly hold together when pressed between your fingers.

8. Heat your corn tortillas. The best way I found to do this is to wrap in a damp paper towel and microwave for about 30 seconds.

9. To assemble, place about 1/3 cup of the mixture down the middle of the tortilla, making sure not to overfill. (You might have to slightly press the mixture together so that it doesn’t fall out of the tortilla.)

10. Carefully roll up the tortilla and place seam side down on a parchment-lined baking sheet and repeat with remaining tortillas.

11. Put the pan in the oven and cook for about 15-20 min. The outside edges of the tortillas will become golden brown.

12. Once cooked, remove from the oven and top with desired garnishes.
