Black Bean Tacos with Mango Salsa

We love tacos in our house, and usually have some sort of version every week. This is definitely one of my go to recipes because the filling and salsa are so easy to make and require minimal ingredients. A little tip I have for these or any tacos you are making, is to make sure you heat the tortillas up in skillet; if you don't already. Heating the tortilla up makes all the difference! There are two ways that I recommend, either in a dry non stick pan, or in a pan with a little bit of oil in it. Simply cook on each side for thirty seconds to a minute over medium high heat and you're good to go!



 

Black Bean Tacos with Mango Salsa

Yield: 4 Servings

Ingredients:

2 mangoes, trimmed and diced

1 avocado, diced

¼ of a red onion, diced

¼ c. cilantro, chopped

Juice from ½ lime

1 tbsp. olive oil

2 cans black beans, drained and rinsed

1 small can green chilis

1 tbsp. ground cumin

1 tsp. paprika

¼ c.- ½ c. vegetable broth (as needed to thin out beans)

Salt and pepper to taste

Juice from ½ lime

8-10 corn tortillas

½ c. crumbled feta (optional topping)

Directions:

1. In a bowl, combine mango, avocado, red onion, cilantro and lime juice together. Season with a pinch of salt and set aside to use later on tacos.

2. In a medium sauté pan, heat olive oil over medium heat and then add in the black beans and green chilis.

3. Next, add in cumin, paprika and salt. Stir to combine, and then using your spoon start smashing the beans, leaving some of the beans partially intact. Thin with vegetable broth as needed. Cook until beans are heated through and finish with a squeeze of lime juice and adjust seasoning to preference. Remove from the heat.

4. Assemble tacos, using mango salsa, feta and extra cilantro if desired.
