One Pot Chili Mac

I love a dinner that comes together in one pan and in only 30 minutes. Perfect for a quick weeknight dinner.


There have been a couple cold and rainy days here over the past week and there is nothing I love more than a bowl of Chili Mac to warm me up. Finish it all off with a squeeze of lime, a little avocado and you have got yourself a delicious meal!

This dish is completely customizable and there are no limits to what you can add or top it with. I like to use a whole grain pasta in mine for a little added protein with the beans. The only thing I would recommend is to make sure you don't overcook the pasta; otherwise it will become mushy mess and won't be as fun to eat.

Making sure the pasta is al dente will also help keep your leftovers tasting great the next day because the noodles will continue to soak up the liquid even while it hangs out in the fridge.

One Pot Chili Mac

Yield: 4-6 Servings

Ingredients:

2 tbsp. olive oil

1 yellow bell pepper, diced

1 yellow onion, diced

2-3 cloves of garlic, minced

1 tbsp. chili powder

½ tbsp. paprika

1 tbsp. cumin

1 c. frozen corn kernels

1 – 15 oz. can pinto beans, drained and rinsed

1 – 15 oz. can black beans, drained and rinsed

1 – 15 oz. can crushed tomatoes

1 – 15 oz. can tomato sauce

2 c. vegetable broth

2 c. dry noodles (I used shells, but you can use whatever you have on hand)

Salt to taste

Toppings:

Cilantro, lime, avocado

Directions:

1. In a large, deep sided sauté pan; heat pan over medium high heat. Add in olive oil.

2. Once heated, add chopped onion and pepper to pan, with a sprinkle of salt, and sauté until onion is translucent and tender.

3. Next add in all of the spices and garlic. Stir until incorporated and fragrant.

4. Once the garlic and spices are fragrant, stir in the corn, beans, crushed tomatoes and tomato sauce into the pan; bring to a low simmer.

5. Add vegetable broth and noodles, stir to combine. Turn up heat to bring pan to a boil. Once it reached a boil, put a lid on the pan and simmer on medium-low heat for about 12-15 minutes or until pasta is al dente.

6. Remove the lid, season with a little more salt to your preference. Then give the pan one last stir.

7. Top each bowl off with your favorite toppings, and enjoy!
